Basque Crab
Healthy and incredibly tasty. Flambéed and gratinated, this Basque crab is perfect as a starter or as tapas.
Ingredients
- onion, yellow
- tbsp oil, neutral
- tbsp butter
- tomatoes, peeled and deseeded
- ml tomato fritto
- crab shell, white meat
- ml fish stock
- ml cognac
- tsp smoked paprika
- salt, to taste
Instructions
Brown the onion in oil over low heat until caramelised (light brown in colour).
Add the butter and the coarsely chopped tomatoes. Fry for about 30 seconds, until the tomatoes "melt".
Stir in the tomato fritto and fish stock, and reduce until you have a smooth mixture.
Add the crab meat, pour over the cognac and set it alight.
Season to taste with smoked paprika and salt.
Spoon the mixture back into the crab shells and gratinate with 1 tbsp butter at 200°C for about 8 minutes.
