Linguine alla Granchio
A simple Italian pasta dish with crab, cherry tomatoes, garlic and chilli. Linguine with crab is quick to make and perfect when you want to serve something extra good for dinner.

- g Crab meat (2 crab shells)
- Cherry tomatoes
- Thyme sprigs (leaves only)
- Garlic cloves
- Red chilli
- Green chilli
- Thinly sliced chilli, to garnish
- ml Extra virgin olive oil
- ml Fish stock (optional)
- g Dried linguine
- Lime
- Parsley, to garnish
Instructions
Method
Halve the cherry tomatoes. Thinly slice the garlic and chilli.
Cook the linguine about 2 minutes less than stated on the packet.
Put the olive oil in a pan or large frying pan. Add the garlic and thyme and let them sizzle gently over a low heat. The garlic should not brown.
When the pasta has about 2 minutes of cooking time left, transfer it to the pan along with the chilli and cherry tomatoes.
Add a ladleful of pasta water or fish stock. Mix well while the pasta finishes cooking in the sauce. Add more liquid as needed.
Fold in about 200 g of the crab meat.
Divide the pasta between plates and top with the rest of the crab meat.
Garnish with finely sliced chilli and parsley. Squeeze over a little lime juice before serving.
