Chopped salad with crab
Why just make a salad? A chopped salad is fun, easy and delicious. And it's best of all with crab. ;)
Ingredients
For the chopped salad
- g Crab
- Roasted pepper
- Gherkins
- tbsp Pickled onion
- Cucumber
- Iceberg lettuce
- tbsp Parsley, chopped (fresh)
- tbsp Chilli mayonnaise
- Baguettes, sandwiches or slices of bread
Instructions
Halve the lettuce and lay the roasted pepper, cucumber, gherkin, pickled onion and parsley between the halves. It's worth putting a couple of lettuce leaves at the bottom and a couple on top — that keeps everything in place on the board.
You can use raw pepper here, and you can buy ready-roasted peppers, but roasting your own is very easy. Wrap a pepper with olive oil, salt and pepper in foil and bake at 200°C/180°C fan/gas 6 for about 30 minutes. Peel off the blackened skin before you chop it.
Cut it into thin strips first, then chop away until your hand cramps up.
Add the chilli mayonnaise and season to taste with salt and pepper, then carry on chopping.
You can buy chilli mayonnaise, or make your own by mixing plain mayonnaise and sriracha to the heat you want.
Fold in the crab and spread it over a baguette, a sandwich or a slice of bread.
