Creole pasta with crab
A full-flavoured pasta dish inspired by the Creole kitchen.
Ingredients
- g Crabmeat (2 crab shells' worth, a mix of white and brown)
- g Pasta (dried)
- tbsp Olive oil
- Onion, finely chopped
- Garlic cloves, finely chopped
- Red pepper
- tbsp Cajun spice mix (shop-bought is fine)
- ml Cream
- Lemon, juice from half
- Cherry tomatoes
- Rocket
- Parmesan
For the Creole spice mix
- tsp Paprika
- tsp Onion powder
- tsp Garlic powder
- tsp Cayenne
- tsp Black pepper
- tsp Thyme, dried
- tsp Oregano, dried
- tsp Salt
Instructions
Mix all the spices together.
Put a pan of water on for the pasta and cook it according to the pack instructions.
Fry the onion and garlic in the olive oil over a medium heat for about 2 minutes.
Add the pepper and the spice mix and cook for a further 2 minutes.
Pour in the cream and bring to the boil. Reduce until thickened to your liking.
Season the sauce to taste with lemon juice, salt and pepper. Fold in the crabmeat.
Mix the cooked pasta with the sauce and fold through the cherry tomatoes.
Top with rocket and shaved parmesan, if you like.
Serve with good bread and aioli.
