Fried rice with crab!
Made a bit too much rice yesterday? Then we've got a brilliant idea for you.
Ingredients
- g Cooked rice
- g Crabmeat, picked
- Red chilli
- Green chilli
- Carrot, cut into strips
- Leek, cut into strips
- Small shallots, cut into strips
- tbsp Soy sauce
- tbsp Oyster sauce
- tbsp Coriander
- Lime
Instructions
You can use all sorts of things from the vegetable drawer here. This is a perfect dish for using up leftovers.
Beat the egg and fry it over a high heat in neutral oil until scrambled. Take it out and set it aside.
Add more oil and fry the carrot, leek and shallot over a high heat, stirring constantly. Once they've taken colour, put them in the bowl with the egg.
Add more oil and fry the rice over a high heat, stirring constantly.
When the rice has taken colour and gone a bit crispy in places, add the egg and vegetables from the bowl and carry on frying until everything is well mixed.
Add the soy sauce and oyster sauce, the chilli and the coriander and mix together.
Fold in the crab right at the end and season to taste with lime, and more soy sauce if it needs it.
Serve and enjoy!
