Miang kham with crab
Miang kham is a Southeast Asian snack whose name translates literally as "one bite wrapped in a wrap".
Ingredients
For the miang kham dressing
- g Ginger
- tbsp Oil
- Chillies
- tbsp Palm sugar
- Lime, juice
- tbsp Fish sauce
- ml Apple juice
- tbsp Coriander
For everything else
- g Crabmeat (picked)
- tbsp Desiccated coconut (toasted)
- tbsp Peanuts (chopped)
- Little Gem lettuce
Instructions
Dressing
Cut the ginger into strips and mix it with the oil, chilli and palm sugar. Then heat it in the oven until the ginger is soft and the palm sugar has dissolved (140°C/120°C fan/gas 1 for 20 minutes should do it).
Mix the remaining dressing ingredients in and blitz to a pourable mixture with a stick blender.
Everything else
Pick the crabmeat and fold it through the dressing.
Arrange on a Little Gem leaf and scatter the coconut and peanuts over the crab mixture.
Enjoy it in the summer sun — as a one-bite snack before dinner.
