Papaya and pomelo salad with crab
An Asian-inspired crab dish that takes you somewhere warmer.
Ingredients
- g Crabmeat (a mix of white and brown)
- Green papaya
- Pomelo
- Shallots
- tbsp Peanuts, toasted and roughly crushed
- tbsp Crispy fried shallots
For the dressing
- Small chillies, finely chopped
- Garlic clove
- tbsp Fish sauce
- tbsp Lime juice
- tbsp Sugar (palm sugar is good)
Instructions
Put all the dressing ingredients in a mortar and pound them together.
Crack the crab claws and pick out the meat, removing every last bit of shell. Set the picked crabmeat aside.
Peel and grate the papaya, or cut it into thin strips.
Strip the membranes off the pomelo so you're left with just the flesh. Tear it into smaller pieces.
Slice the shallot and mix it with the prepared papaya, the pomelo and the crabmeat.
Fold through the dressing and arrange in bowls.
Top the salad with the roughly chopped peanuts and the crispy fried shallots just before serving.
