Potato waffles with whipped soured cream, horseradish and crab

Ingredients
For the potato waffles
- Waxy potatoes
- tbsp Melted butter
- tsp Salt
For everything else
- g Crab
- Horseradish
- ml Full-fat soured cream
- Lemon, zest
- Herbs, to garnish
Instructions
Potato waffles
Peel the potatoes and coarsely grate them.
Put the grated potato in a bowl and add the salt. Massage the salt into the potato so it releases its water.
After 5 minutes, squeeze the liquid out of the potato.
Add the melted butter and mix.
Spread the mixture evenly over the waffle iron and cook until golden and crisp. Cool on a wire rack.
Whipped soured cream
Whisk the soured cream to a light, stiff cream and transfer it to a piping bag.
Top a waffle heart with the whipped soured cream, then add the crab, the lemon zest and whatever herbs you have to hand.
Perfect as a snack or a welcome bite on Christmas Eve or New Year's Eve, say! :fireworks:
