Prawn crackers with crab mix
Prawn crackers are delicious, crab is delicious, and this little bite from our friend Kjersti (@minmatgladeverden) is seriously delicious! 🦀
Ingredients
For the crab mix
- g Picked crabmeat
- Tomatoes
- Garlic clove
- tsp Chilli flakes
- ml Mayonnaise
- Lime, juice
For everything else
- Prawn crackers
- ml Oil for deep-frying
- Radishes
- Coriander (a pot)
Instructions
Crab mix
Finely chop the tomato and garlic and pick the crabmeat (if you're not buying it ready-picked).
Mix the mayonnaise, crab, tomato and garlic in a bowl, and season to taste with chilli flakes, lime juice, salt and pepper.
Chill it.
Frying the prawn crackers
Heat the oil in a heavy-based pan. It should sit between 160 and 180°C.
You can also use an air fryer, if you're one of the people who managed to get hold of one. In that case, give them 2 minutes at 100°C.
Drop the prawn crackers into the pan one at a time, to keep the temperature up and to make sure there's room for them to puff up (they almost double in size).
When they're done, let them drain on kitchen paper.
Assembly
Put a generous spoonful of the crab mix on the prawn cracker and garnish with thin slices of radish and coriander.
Serve them as a welcome nibble or a one-bite snack. Our friends in France call it an amuse-bouche — which translates literally as "mouth-amuser". We can confirm that this one gives us plenty of amusement in the mouth.
